RECIPE: White Chicken Chili

If you can’t boil water, this recipe is for you! Not only is this one of the easiest recipes to follow, it’s delicious and jam-packed with protein, essential amino acids, fats and fiber. Heat up your chili with jalapeños, or keep mild for the kiddos.

Ingredients

1 rotisserie chicken
1 (15oz) can garbanzo beans
1 (15oz) can great northern beans
1 (15oz) can kidney beans
2 (4oz) cans diced green chilis
1 block Monterey Jack cheese, cubed (optional)

Directions

  1. Pull and coarsely shred meat from rotisserie chicken.

  2. Add everything (including liquid from canned ingredients) into crock pot. Let cook on low leave for 6-8 hours to enjoy at dinner time.

  3. Serve with cubed avocado, sour cream, fresh cilantro, and sliced jalapeños. Enjoy!
