RECIPE: Steak & Potatoes

This simple, healthy meal is packed with flavor and nutrients. Follow these easy steps to cook a delicious steak, crispy broccoli, and perfectly roasted sweet potatoes.

Ingredients

1 grass-fed steak* (ribeye, sirloin, or filet)
1 large sweet potato, sliced into ¼-inch rounds
1 head of broccoli, cut into florets
1 Tbsp olive oil (or avocado oil)
1-2 Tbsp salted ghee
2 cloves garlic, minced
1 tsp sea salt
½ tsp black pepper
½ tsp smoked paprika (optional, for sweet potatoes)

Directions

  1. Roast the Sweet Potato Slices Preheat oven to 400°F. Place sweet potato slices on a baking sheet, drizzle with 1 Tbsp olive oil, season with salt, pepper, and paprika, and toss to coat. Bake for 20-25 minutes, flipping halfway through, until golden and tender.

  2. Cook the Steak Heat a cast-iron skillet or heavy pan over medium-high heat. Add 1 Tbsp ghee. Season both sides of the room temperature steak with salt and pepper. Place the steak in the hot pan and sear for 3-4 minutes per side (for medium-rare). Adjust cook time for your preferred doneness. Add additional ghee & minced garlic to the pan in the last minute, spooning over the steak. Remove from heat and let the steak rest for 5 minutes before slicing.

  3. Sear the Broccoli In the same pan, toss in the broccoli florets and cook over medium-high heat for about 3-4 minutes, stirring occasionally. Season with salt and a little garlic, then remove once lightly charred and tender.

  4. Serve & Enjoy! Plate the steak with the roasted sweet potato slices and seared broccoli. Enjoy a healthy, flavorful meal in under 30 minutes!
