RECIPE: Pear Salad

This crowd-favorite salad is easy to make, packed full of nutrition, and perfectly timed for autumn.

Ingredients

Salad
8oz citrus greens (or any mixed greens)
2 soft ripe pears, sliced very thin
¼ cup blue or gorgonzola cheese crumbles
¼ cup halved pecans

Dressing
3 Tablespoons olive oil
2 Tablespoons red wine or apple cider vinegar
1 teaspoon honey (or hot honey if preferred!)
½ teaspoon dijon mustard
Himalayan salt & course ground pepper to taste

Directions

  1. In a large bowl, whisk dressing ingredients to combine and emulsify. Season with salt and pepper to taste.

  2. Add 8oz citrus/mixed greens to bowl with dressing. Toss to coat.

  3. Add pear slices, cheese crumbles, and pecans to salad. Toss or arrange as desired.

  4. Enjoy alone, or pair with seared wild caught salmon for some added protein and fat!
