RECIPE: Chicken Poke Bowls

This is great recipe for kids and adults alike! Each ingredient is prepped and placed in its own bowl for serving, allowing everyone to choose what they prefer — and the protein and marinade can be swapped out to your liking, making this bowl extremely versatile for any meal of the week.
Ingredients
Protein
1 lb organic chicken breast (or swap with your favorite protein)
1-2 Tbsp chopped organic garlic
¼ tsp paprika
Salt and pepper to taste
Veggies
1 small container of mixed organic greens
1 organic red bell pepper, diced
1 organic poblano or jalapeno pepper, diced (for extra heat, leave seeds in)
½ Vadallia onion, diced
1 cup organic edemame
1 cup organic garbanzo beans
½ cup cilantro, roughly chopped
Sesame seeds (optional)
Directions
Start with the protein: Season chicken and cook on stove top until fully cooked. Remove from heat and let rest. Chop rested chicken into bite-size pieces and place in bowl for serving.
Prep your veggies: Your vegetable ‘bed’ is just as versatile as the protein — sauté your greens for a stir fry spin, or simply dice and serve at room temperature for a fresh crunch. Get creative, and pick your favorites!
Notes
When serving this meal, leave each of the veggies separately in their own dish. Have each person scoop up what they prefer so everyone has exactly what they want!
This makes for a wonderful school or work lunch: bright, delicious, and packed full of real foods.
