Chicken Poke Bowls

This is great recipe for kids and adults alike! The protein and marinade in this recipe can be swapped out for your liking, making this extremely versatile for any meal of the week. This makes for a wonderful school lunch packed full of real foods and tastes delicious.

Each ingredient is prepped and placed in its own bowl for serving. This is another great benefit to this style of recipe, everyone is able to choose what they prefer!

Quality Matters!

Use fresh & organic whenever you can - you can taste the difference!

Starting with the protein…..

  • 1 lb organic chicken breast (swap for your favorite protein)

  • 1-2 TBSPS chopped organic garlic

  • 1/4 tsp paprika

  • Salt & Pepper to taste

Season chicken and cook on stove top. When fully cooked, remove from heat and let rest. Chop into bite size pieces, place in bowl for serving.


Moving on the veggies, your veggie ‘bed’ is just as versatile as the protein. These can be heated up to feel more ‘stir-fry like’, or simply diced and served at room temp. Get creative a pick your favorites. Here are some of my family’s faves:

When serving this meal, leave each of the veggies seperately in their own dish. Have each person scoop up what they prefer so everyone has exactly what they want!

  • Small container of mixed organic greens

  • 1 organic red pepper diced

  • 1 organic poblano or jalapeno diced - leave seeds in for a little heat

  • 1/2 vadallia onion diced

  • 1 cup organic edemame

  • 1 cup organic garbanzo beans

  • 1/2 cup chopped cilantro

  • Sesame seeds

For dressing on your poke bowl, I press the easy button and use Primal Kitchen oil & vinegar OR the cilantro lime dressing.
