RECIPE: Sweet & Sour Tomatoes
Summer’s not over until you’ve tried this delicious tomato salad.
Ingredients
1½ lbs sweet (or cherry) tomatoes, halved
1 orange pepper, finely chopped
1 jalapeño, deseeded & finely chopped (leave seeds in for more heat)
2-3 Tbsp Garlic chopped
1 cup dill & cilantro mix chopped
¼ cup White vinegar
¼ cup Apple cider vinegar
2 Tbsp Monk fruit (or sugar)
Red onion finely sliced (optional)
Salt & pepper to taste
Directions
Mix ingredients into a container, shake lightly, and place in refrigerator. This is like a fine wine, it will taste better with 2-3 days of aging, stirring daily. Enjoy!
